High Protein Pancakes

These pancakes are perfect for when you’re craving something sweet, but still need to get that protein in. This is often my go to breakfast because, let’s face it, carbs are life! Super easy to make and you can find most of the ingredients in your kitchen. Feel free to tweak this recipe and experiment with flavours and toppings to make it your own.

INGREDIENTS

  • 2 eggs
  • 1 banana
  • 1 scoop protein powder (I used Organifi’s Vanilla)
  • 3-4 tbsp oats
  • 1 tsp vanilla
  • 1/4 tsp cinnamon

STEPS

  1. First blend all the ingredients together, you want a slightly thick consistency and add the oats accordingly.
  2. Spray a frying pan with some coconut oil and allow it to heat up, the pancakes cook pretty fast so keep and eye on them.
  3. Top the pancakes with berries, honey, almond butter or any toppings of your choice.

Low Carb Pancake Recipe

This has become one of my go-to breakfasts, because it’s delicious and simple. It took me a few tries to get the recipe right, but it was definitely worth it. In this recipe I used almond and coconut flour, I haven’t tried it with other nut flours, but the ratio of these two flours are necessary to achieve the right consistency. However, you can substitute the other ingredients in this recipe.

Ingredients:

  • 1/2 cup almond flour
  • 1/4 cup coconut flour
  • stevia (to taste) (or any sweetener of choice)
  • 1/2 almond milk (or any milk of choice)
  • 2 tbsp coconut oil
  • 1 tsp vanilla essence
  • 2 eggs

Directions:

  1. Combine all the ingredients in a bowl (tip: make sure all the ingredients are at room temperature to prevent the coconut oil from solidifying)
  2. Spray a pan with coconut oil after allowing it to heat up and pour your batter in.
  3. Allow small bubbles to form on the surface of the pancakes before flipping them over.
  4. Top them with berries, almond butter or any toppings of your choice.

2 Ingredient Pancakes

A quick and simple breakfast idea for when you need a healthy but delicious fix. This is one of my personal faves and it’s gluten and dairy free!

Ingredients:

  • 1 banana (medium sized)
  • 1 egg (whole)
  • vanilla extract & cinnamon (optional)
  • Coconut oil (100% pure, virgin)

Method:

  1. Mash the banana with a fork or in a blender & (optional) add the cinnamon and vanilla.
  2. Add in the egg and mix well, making sure there are no lumps. (Tip: you want a slightly thicker consistency).
  3. Heat up your pan and brush it with around half a tsp of coconut oil.
  4. Turn your flame down to low and pour the batter in. ( Tip: it’s better to cook it on a low flame so that it cooks evenly).
  5. Once finished, you can top it with anything you like; blueberries, strawberries, honey or even coconut flakes.
